Having studied with the Wine and
Spirit Education Trust it was destiny that brought us to Chablis. Living here
has been an enlightening experience, providing the opportunity to learn so much
first hand about Chablis and to experience the rhythm of the seasons. There are
over 300 producers of Chablis in the 20 communes of this region.
In our own tasting room we can offer guests an 'Introduction to the Wines of
Chablis' seminar. In an informal, a friendly and, we hope, a fun way we can help
you to understand the development of our appelation and to differentiate and
appreciate the wines that comprise the 'vignobles de Chablis'. We will provide
you with the opportunity to sample a selection of wines. Seminars can arranged
for between two and eight participants - booking is essential. We are confident
that following our 'Introduction to the Wines of Chablis', and armed with
recommendations, you will be eager to explore independently some of the local
caves. There are certainly some hidden 'gems'!

As well as
the world famous
Chablis, other local wine villages offer some hidden gems for Pinot
Noir, Aligote and Sauvignon Blanc.
The Caves de Bailly are also famous for the production
of
Cremant de Bourgogne, the sparkling wine of the region.
Sancerre and Champagne
Sancerre is only an hour away, the
Champagne region approximately two hours, and an hour south are the
famous vineyards of the Cote d'Or. All are very inviting.

Although I cannot claim to be a wine connaisseur, I have developed a
keen interest and have got to know Chablis and some
of its producers really well.
I feel sure that you will certainly be able to benefit during
your stay from my local knowledge and experience of Chablis and its

Fabulous
setting next to the river. The rooms are big and airy, spotlessly
